Hearty, filling and delicious, the burrito is one of the most popular Latin-American dishes around the world. Tasty meats, beans and rice, cheese and more wrapped in a soft tortilla, this beloved street food classic is a lunch-time or dinner go-to on our menu, along with our equally as delicious Burrito Bowls.
Served without the tortilla as a lighter and fresher alternative, our Burrito Bowls are packed with all the same flavour and tasty goodness as a Burrito including Mojo Chicken, Veggie Chilli and Slow-Cooked Beef. With rice, beans, peppers and guacamole, it’s the perfect option for a protein-packed lunch or dinner (and the perfect chance to use our guacamole recipe!)
Beef Burrito Bowl
Makes: 1 bowl
Spice level: 🌶 (mild)
You’ll need:
- 150g rice
- 10g cheese (we use Monteray Jack, but you can use cheddar or whatever kind you prefer)
- 40g black beans
- ½ white onion
- Red pepper
- 5g sour cream
- 15g pico de gallo
- 5g spring onions
- 30g guacamole
- 5g fresh coriander
- Pre-prepared Beef Ropa
- Tortilla Chips
- Cook the onions and peppers
Heat the oil in a pan. Once hot, add the onions and peppers to the pan and cook until soft. Season to taste.
- Heat the pre-prepared beef ropa and cook the rice
Cook the rice in your preferred method.
- Start assembling your bowl
In your bowl, add the cooked rice. On top of the rice, add the black beans, cheese, beef ropa, onions and peppers. Next, add sour cream, pico de gallo, chopped spring onions and chopped coriander. Add three spoonful’s of guacamole (or more!) followed by sliced red chillies. Add your tortilla chips on the side and enjoy.
