With a history traced back to the Aztecs, guacamole has become a cherished staple of Latin American cuisine. Its name comes from the Nahuatl word ahuacamolli which loosely translates to ‘avocado sauce’, a hint to its primary ingredient.

While on a trip to Cuba, our founders were shown first-hand how to make the most delicious guacamole they’d ever tasted, and they took that recipe directly back to our bars. Now this creamy, flavourful dip is light and versatile, and can be found in many dishes throughout our menu.

While it’s a welcome addition to our Nachos, Burritos, Sunshine Salad and more, often the simple addition of a tortilla chip allows its vibrant taste to shine best. Who doesn’t love a side of Chips, Guac & Salsa?

Guacamole

Serves: 2-4 amigos

Spice level: 🌶 (mild)

You’ll need: 

  • 200g ripe avocados
  • 10g red onion
  • 1og minced garlic or garlic purée
  • 10g fresh coriander
  • red chillies (adjust this depending on your desired spice levels)
  • ½ tsp cumin
  • 25g plum tomatoes
  • Juice of 1 fresh lime
  • Salt to taste

 

  1. Get dicing

De-seed and finely dice the chillies and red onion.

  1. Prepare the avocados

Slice the avocados in half, remove the stone and scoop the flesh into a medium-sized mixing bowl. Mash with a fork to your desired texture (we like to keep ours chunky!)

  1. Add the seasoning

Quickly add the lime juice to stop the avocados from browning, followed by salt and cumin.

  1. Add fresh ingredients

Add the chillies, onion, tomato, garlic and coriander into the bowl and combine.

  1. Season to taste, add tortilla chips and enjoy!
